2010 Dominique Portet
Fontaine Shiraz/Cabernet Sauvignon
Lovers of good wine are full of praise for the 2010 Dominique Portet Fontaine Shiraz/Cabernet Sauvignon blend. Rich in taste and perfume, this years release comprises 60% Shiraz and 40% Cabernet Sauvignon with grapes sourced from both the Yarra Valley and Heathcote regions, where they were handpicked, destemmed and gently crushed.
Following this, the parcels underwent a three day cold soak, were carefully fermented and then left on skins for two to three weeks, with 80% aged in French oak barrels, and 20% aged in tank to retain vibrancy.
The focus of this wine is fruit, light red cherry aromatics and a floral lift, that leads onto a round, soft structure in the mouth. This is a wine to drink now but will age for the medium term if patience insists.
