2011 Dominique Portet
Sauvignon Blanc

2011 was a challenging year, with cool and wet conditions throughout the growing season, particularly in Coldstream where the grapes for this wine were grown on the family vineyard. The Sauvignon Blanc however thrived throughout the growing season and this years release is one of the more refined. The grapes were handpicked later than any other year, yet the wine has finesse and poise that has been difficult to achieve in warmer years.

The wine underwent 15% new barrel fermentation in French oak and a small portion of the grapes were frozen for one week, thawed and then pressed to barrel to add an extra layer of complexity to the wine. Battonage (lees stirring) was also undertaken to add weight to the mid palate.

This years release is a sophisticated wine with focused fruit flavours. It is floral with lime blossom, grapefruit, and dried herbs predominating which balance with the natural acidity on the palate, offering a lovely creamy texture and roundness.
