2015 ANDRÉ CABERNET SAUVIGNON
The blend comprises 89% Cabernet Sauvignon, 8% Merlot, with the remaining 3% made up of 2% Petit Verdot and 1% Cabernet Franc.
The grapes were picked by hand, sorted on our state-of-the-art sorting line, 100% destemmed and kept whole - yielding natural extract and contributing to texture. The wine spent 25 days on skins developing structure and a silky texture while still at peak freshness. It was then aged in French oak (40% new) for 16 months, with a further two months in tank to fully integrate before being bottled. Once bottled, the wine was then matured for five years in our cellars - building complexity and allowing it to come into balance before release. The time spent in bottle has helped the wine come together and soften slightly, making it a very special drink now (decanted several hours ahead) but, if possible we do recommend it spent more time in the cellar, or wine fridge.
Layered and alluring on the nose, with an array of forest berries and plums laid over pencil lead, bay leaf and spice. Ripe, zesty blackcurrant and plum follow on a detailed palate that is lively and long. It’s threaded with savoury counterpoints of cedar, licorice and tobacco, while dense but super-fine tannins lend texture and shape – and suggest this has decades ahead of it.
