Fermentation
Fruit was hand-selected and handled with a focus on structure, clarity and longevity. Gentle extraction preserved aromatic detail while building fine tannin. Maturation in French oak contributed subtle spice and integration. Time in bottle has allowed the wine to settle and integrate, revealing harmony, texture and evolving savoury complexity.
Vineyards
Sourced from the estate vineyard in Coldstream, planted on grey loams over clay with broken sandstone. These soils provide ideal conditions for Cabernet Sauvignon, producing fruit with structure, definition and the ability to age with balance and consistency.
Vintage
The 2017 Yarra Valley season was cooler and more moderate, resulting in a longer ripening period that encouraged varietal expression and fine tannin development. The wines show restraint, structure and aromatic complexity, with excellent balance supporting graceful evolution in bottle.
